Dry Malt Extracts
--
Dry malt extract is a great brewing product. Many people are familiar with using malt extract syrups, but have never tried the dry version, called DME (Dry Malt Extract). This is the malt sugar that yeast turns into beer!DME is exactly the same product as malt extract syrup, but with the REST of the water removed. Because of this, it is easier to store, cheaper to ship and for you to use. Dry malt doesn't fall to the bottom of your brewpot and cause scorching. It takes a little stirring to get it to dissolve, but we like it a lot.
Because the water is removed, you only need to use about 80% (by weight) of what you need when using malt extract syrups.
Malt Extracts (Canned)
--
There are many different brands of canned malt extracts. Some are hopped, some are not. Some of these hopped "kits" have a packet of yeast under the lid, some do not. Usually, to make beer from one of these "kits" requires the addition of about 2 lbs. of sugar. Using dry malt extract would make the BEST beer. Using corn sugar will make an "acceptable" beer, and using table sugar is a BAD idea. Corn and cane sugars are known to produce a "cidery" taste in your beer.
To add more flavor and aroma, steep a little crushed grain (such as crystal malt) and/or add some additional hops at the end of the boil. You will make a better beer this way for very little extra expense.
It's also nice to add about 1/2 oz of hops at the very end of the boil. Doing this adds a fresh hop aroma to your beer!
Bulk Malt Extract Syrups
--
Bulk malt extract is unhopped liquid malt syrup, made from choice barley. The malt sugars are extracted from the grains, and can be used in this convenient form. We sell more Bulk Malt Extract than all the canned extracts combined. A great North American product at a great price. No adjuncts or coloring are added to this syrup. This allows the home brewer maximum flexibility in formulating your own personal recipes. Your choice of pale, amber, dark and wheat allows great flexibility.
Brewing Grains
--
Brewing grains are grains that can be converted from starches into sugars by the process known as "mashing". These sugars take the place of malt extract in brewing. Mashing (all-grain brewing) requires some additional equipment and temperature control in the brewing process. It's not hard, and if you are currently an extract brewer, you may find it worth trying. It is also much less expensive to brew from grains. Let us know if you need any help getting started!
Specialty Grains
--
Specialty Grains are how we control the color, body and flavor of our beer. If you are an extract brewer, put your crushed grains into a muslin bag (item C42) and throw them into the water as it heats up. It is important to remove the grains at about 170 deg.F (before boiling). If you are an all-grain brewer, these grains are added to the mash. Our website now allows you to order less than one pound, if that's what you need! You can By clicking on Options, you can choose either pounds or ounces for that grain. Remember, there are 16 ounces in 1 pound.
All-Grain Equipment
--
All-grain brewing does not start with malt extracts. It starts with mashing your grain.
"Mashing" is a term used in all-grain brewing to describe the extraction of malt sugars and flavors from the grain itself. It really just involves steeping the grains in hot water for a period of time. Usually, this is about 152 deg F and about one hour. After this, the grain is rinsed (sparged) to collect the sweet liquid. This is boiled with hops to produce your beer. It takes more time and equipment, but allows the brewer more control in his brewing. It is also much less expensive than buying malt extracts.
If you're interested in all-grain brewing, this is where to start.
Hops
--
Pellet hops are not in any way "artificial", they are compressed bits of hop flowers that are very handy to use. Most breweries use hop pellets because they retain their fresh aroma longer that leaf (whole) hop flowers. Homebrew Heaven packages each container of hop pellets in an airtight pouch to ensure freshness. ALL Homebrew Heaven hops are kept refrigerated for the same reason. Hop pellets easily dissolve into your wort and fall to the bottom. Most people do not find this to be a concern. After all, the homebrewer just siphons the clear beer away from the bottom of the fermenters. Some people prefer leaf hops because they are more easily strained out of their wort, or because they serve as a "filter-bed" as the wort is drained off into the fermenter. We find that for most purposes, though, hop pellets are every bit as good. In the end, the choice is yours!
Dry Beer Yeasts
--
Dry brewing yeasts are an excellent way to brew. They take little or no preparation prior to adding your wort. Dry yeasts are inexpensive, and of MUCH better quality than they used to be. We use dry yeasts in all of our Homebrew Heaven Ingredient Kits. Be sure to use at least 10 grams of dry yeast per 5 gallon batch. You cannot use too much yeast in your home brewing.
Liquid Yeasts for Beer
--
The performance of living yeast cells can be affected in many ways. When ordering liquid yeasts, it is important to minimize transit time and overexposure to heat. If this is compounded by other factors, the performance can become unsatisfactory. For this reason, we recommend ordering frozen gel packs along with your liquid yeast when temperatures are expected to be above about 70 degrees F along the route. Additionally, we will NOT ship liquid yeasts outside of the U.S. If you order a liquid yeast, you can expect us to make a reasonable substitution of dry yeast. Dry forms are more stable, and more likely to survive the trip. We'd rather give you a yeast that we know will make it. There are many quality dry yeasts, and this is a better choice.

Wort Chillers
--
Wort chillers are used to cool your "beer" after boiling. (The term "wort" is used to describe unfermented beer). By cooling quickly, you avoid problems with bacteria, and end up with a better head on your beer. We've found that anyone who uses a wort chiller finds them essential for making great beer.
